One of the easiest of all baking recipes and what turns out to be a great breakfast item, in my book at least. This easy banana bread recipe is just sweet enough to contradict the acidity of a good, black cup of fresh ground coffee.
This easy banana bread recipe is in the list of baked goods called quick breads and is a good place to start to learn baking skills. Unlike some baking formulas the recipes for quick breads can be forgiving if the measurements are not exact or weighed instead of measured.
Easy Banana Bread Recipe
3 to 4 ripe bananas (the riper, the sweeter and more moisture)
1 cup sugar
1 2/3 cup all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 large eggs
1 teaspoon vanilla or almond extract
8 Tablespoons or 1 stick of butter melted and brought back to room temperature
Preheat the oven to 350°F
prepare a loaf pan by coating the insides with Bakers Joy or some other baking non stick spray. Cut a sheet of parchment paper so that is covers the bottom of the pan and extends over the sides when folded. This will help when getting the cake out of the pan.
Mix the sugar and bananas in a bowl and mix the eggs, extract and butter in another bowl. Combine these two bowls and mix to blend.
Pulse your flour, baking soda and salt in a processor to mix and sift. Add the banana mixture to the flour mixture and blend to mix but do not over mix as this will create more gluten making the final product tough. You want the bread to be firm but still tender more like a pound cake than a bread.
Bake for approximately one hour, use the toothpick test for done and there you have an easy banana bread recipe anyone can make.
